This Thai marinate is easy to prepare and we love the tangy and sweet flavour of it! you can mix the sauce to marinate the meat, or simply cook the sauce on its own to use and a dressing over chicken, pork or Tofu.
Tamarind Concentrate 2 tbsp
Blown sugar or Palm sugar 2 tbsp
Fish Sauce 2 tbsp
Garlic minced, 1 tsp
Chicken or Pork 300 g, cut into cubes
1 Red pepper, dice
1) Mix the Tamarind, Sugar and fish sauce together, pour it over the meat, leave the marinate in for 30 mins. 2) in a large frying pan or wok, heat up 1 tbsp of oil, add garlic and fry for 30 sec, add the meat.
3) Brown the meat and stir fry it until just cooked, add in the red pepper and continue to cook for another 1 or 2 mins.
4) Ready to serve with Boiled Jasmine Rice or Noodles.
